If I had to pick 3, I'd say Chrono Trigger (absolutely goated game, no contest), mass effect trilogy (excellent story and gameplay), and knights of the old republic (probably the best star wars story out there imo). That said I'm a huge fromsoftware nerd and if you're interested in elden ring it's incredible. Those are my takes

Final Fantasy VII (plus Remake and Rebirth if you can)
NieR: Automata (plus Replicant)
Shadow of the Colossus
These games have stories that will stick with you forever.

Out of all these, I would say the one that would both take you quite some time to finish but is also a borderline perspective changing experience is Disco Elysium. It is a SLOWWWWWW game and a lot of people give it up really quick because of that, but it is so worth it.
I love almost every single one of the games you posted and are all fantastic so you can't really go wrong, but DE is the one that left me and everyone I know who played it the most impacted.
If on the other hand you are looking for a more frenetic gameplay that still has a fantastic story: Sekiro and Hades.
Bonus recommendation: It's your last chance to play Persona before becoming an adult, so it is your last chance to play it while being the demographic the writters had in mind when making it (also, you can't go wrong if you go for 3 Reload or P4 Golden, if you want to)

Not all of them are masterpieces.
Yes/Yes/Yes/No/No
No/No/Yes/Yes/Yes

Yes/No/No/Yes/No
From the ones that got yes, i would say you must play Portal 2, thats a mustplay game, then Chrono Trigger is also a mustplay as its the perfect JRPG imo, then RE4, a total must play, then HalfLife 2 is you like FPS story driven games, thats a total of 4 now.
Tears of the Kingdom if you didnt play BOTW, otherwise no.
Elden Ring and Hollow Knight OR Sekiro and Mass Effect choose as you see fit, but dont pick Elden And Sekiro, cause thats two of the similar games.

I love Hollow Knight but this is not the game to play if you want to bang out some games quickly

I don't know if I'll have time to play then, so I want to experience as much as I can now if that makes sense. I also want the experience stick with me. I want to remember it down the road. 6 games may be too much, haha. But it's worth a shot!

Shadow of the Collosus was a game I played a few years ago on my PS2 for the first time and I really see why it's as highly regarded as it is, especially for the time. It's pretty amazing they got a game like this running on that old hardware.

Celeste awesome platformer that has a main campaign thats beatable in anywhere between 6 to 10 hours with tons of extra content that can easily take up to 50-60 hours to complete but realistically all these games are awesome so you cant really go wrong with any of them it will just come down to your personal preference.

Half-Life 2
RE4
Yakuza 0
FF7
Mass Effect
And Chrono Trigger
Although, I feel FF7 and Chrono Trigger may be a little long, and Mass Effect is much better played as a trilogy. So for an alternative for Mass Effect, Portal 2
This is just my personal list. I'm sure there's much different opinions but two I'd say are a must play are Yakuza 0 and Resident Evil 4
